Lemon Poppy Seed Chia Loaf

When life gives you lemons…make a Lemon Poppy Seed Chia Loaf! This healthier, modern take on classic lemon poppy seed cake adds chia seeds in addition to poppy. A healthy dose of sour cream keeps the cake moist while the zest of two lemons lends a deep, lemony flavor.

 

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 pound unsalted butter
  • 3/4 cup plus one tablespoon sugar
  • 3 eggs
  • 8 ounces sour cream
  • 1/3 cup poppy seeds
  • 1/4 cup chia seeds
  • 3 tablespoons grated lemon zest
  • 1/2 cup each freshly squeezed lemon juice and sugar for glaze
  • 1 tablespoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F. Butter and flour a loaf pan.
  2. Whisk together the flour, baking powder, baking soda, and salt together. Cream the butter and sugar together until fluffy. Slowly add the eggs one at a time. Add the lemon zest, poppy seeds, chia seeds, and vanilla. Beat in half the flour, then add the sour cream. Last, add the rest of the flour and mix until just combined. Bake for 45-50 minutes or until a toothpick inserted comes out clean.
  3. While the loaf is baking make the lemon syrup. Heat the lemon juice and sugar together until it comes to a simmer. As soon as the loaf is taken out of the oven, spoon the syrup on top. Leave the loaf in the pan for several hours, or overnight.
