Slow Cooker Mac and Cheese

Slow Cooker Mac and Cheese is simple to put together and is a creamy, comfort food for weeknight dinners or potlucks. This is a super budget friendly recipe. It comes together quickly and can easily be scaled up, which makes it perfect for holidays and also feeding a crowd! This is one of my absolute favorite recipes. Mac and Cheese has been the long standing favorite food of mine. It was my favorite as a kid and it is my favorite still as an adult. But my tastes have certainly graduated from the boxed mix. In fact, I can no longer stand macaroni and cheese from a box.

I love it so much that this super creamy mac and cheese is made completely in the slow cooker. No precooking of the noodles or making a roux. Seriously so very easy! It would make the perfect side dish for Thanksgiving! Also, makes a great dinner when you don’t have a lot of time to prep. I’m telling you, this creamy slow cooker mac and cheese is so very delicious!

Serve this mac & cheese with Chicken Tenders, some spicy Buffalo Chicken Meatballs or Honey Mustard Chicken Fingers.

  • 1 (16-oz.) package elbow macaroni
  • 1 1/2 cups heavy cream
  • 1 (12-oz.) can evaporated milk
  • 4 large eggs, lightly beaten
  • 1/2 cup butter, melted
  • 1 1/2 teaspoons table salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 cups (16 oz.) shredded extra-sharp Cheddar cheese, divided
  • Vegetable cooking spray

Instructions

  1. Cook macaroni according to package directions. Stir together cream, next 5 ingredients, cooked macaroni, and 2 1/2 cups cheese in a large bowl.
  2. Pour macaroni mixture into a lightly greased (with cooking spray) 6-qt. slow cooker; sprinkle remaining 1 1/2 cups cheese over macaroni mixture.
  3. Cover and cook on HIGH 3 hours; reduce slow cooker to LOW, and cook 1 hour.
