Thai Cucumber Relish Ajad

This quick, spicy-sweet relish makes a perfect picnic side. Use this make-ahead sweet-and sour condiment to brighten thai inspired meal. Ajad is a popular street food condiment in Thailand, intended to bring a bit of acidity and bite as it cuts through the heartier and greasier foods that are so delicious in Thai cuisine. This fresh pickle is the classic accompaniment to many deep-fried and BBQ Thai appetizers and some curries.

Ingredients

  • 1/4 cup water
  • 1/4 cup sugar
  • 1/4 cup distilled white vinegar
  • 1/4 tsp. kosher salt
  • 2 tbsp. chopped cilantro
  • 1/4 fresno chile, finely chopped
  • 4 small shallots, sliced thin
  • 1 small cucumber, quartered lengthwise, sliced thin

Instructions

  1. Stir sugar, vinegar, salt, and 1⁄4 cup boiling water in a bowl; let cool. Stir in cilantro, chile, shallots, and cucumber before serving.
