Banana bread – Here is a very basic and very forgiving recipe that takes 15 minutes to whisk together. A little over an hour of waiting, while your house fills with tempting aromas and then you’ll be snacking on your very own slice of warm, fresh-baked bread. Just about the only requirements for making banana bread is that you use ripe bananas and good loaf pan. Once the skins start to develop freckles and the fruits are just a little too soft for pleasurable snacking, then it’s bread time. Letting your bananas ripen even longer — until the skins are brown and the fruit falls apart when you peel it — will make your bread even more strongly banana-flavored and richer.

The Best Banana Bread Recipe for a Perfectly moist Loaf

I’m a huge fan of banana bread, so I like to have several recipes in my arsenal that I can turn to when there are over-ripe bananas on my counter. This one is one of my favorites because it’s simple, quick and versatile: You can switch up the type of flour you use, or add different types of nuts and dried fruit to customize it to your tastes (cranberries would be delicious with the bananas). The possibilities are endless!

Units Scale
  • 1 cup granulated sugar
  • 8 tablespoons (1 stick) unsalted butter, room temperature
  • 2 large eggs
  • 3 ripe bananas
  • 1 tablespoon milk
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder

Instructions

  1. Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan.
  2. Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition.
  3. In a small bowl, mash the bananas with a fork. Mix in the milk. In another bowl, mix together the flour, baking powder, baking soda and salt.
  4. Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.
  5. Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.
