Cool Cucumber Dressing

This Cool Cucumber dressing is one of my favorites. It is really creamy and packed full of great flavors. It is very refreshing and is the perfect salad dressing for a wonderful summer salad. This dressing recipe is out of this world good! It’s great on crispy salad greens, or used as a dip for fresh veggies, I also love it on fish in place of tartar sauce.

Ingredients

Scale
  • 1 medium cucumber, peeled and seeded
  • 1 green onion
  • ½ cup salad oil
  • ¼ cup White Wine Vinegar
  • 2 Tbsp. minced ginger root
  • 1 Tbsp. honey
  • Pinch salt

Instructions

  1. Cut cucumber and green onion in four pieces; place in blender container.
  2. Add remaining ingredients. Cover and run on high 1 minute.
  3. Serve over tossed green salads, or chicken and seafood salads.

Notes

  • More uses: Use it to marinate the Grilled Chicken. Serve it with vegetable sticks as a dip.
