Cool Cucumber Dressing
This dressing recipe is out of this world good! It’s great on crispy salad greens, or used as a dip for fresh veggies, I also love it on fish in place of tartar sauce.

Ingredients
- 1 medium cucumber, peeled and seeded
- 1 green onion
- ½ cup salad oil
- ¼ cup White Wine Vinegar
- 2 Tbsp. minced ginger root
- 1 Tbsp. honey
- Pinch salt
Instructions
- Cut cucumber and green onion in four pieces; place in blender container.
- Add remaining ingredients. Cover and run on high 1 minute.
- Serve over tossed green salads, or chicken and seafood salads.
