Ingredients
Hibachi Chicken
- 1 lb chicken breasts, diced
- 1 tbsp sesame oil
- 2 tbsp soy sauce
- 2 tbsp hoisin sauce
- 4 cloves garlic, minced
- 1 tsp fresh minced ginger
Mustard Sauce
- 1/2 cup light mayo
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp dijon mustard
Sauteed Vegetables
- 1 tbsp olive oil
- 1 carrot, thinly sliced
- 1 cup mushrooms, sliced in half
- 1 yellow onion, chopped
- 1 zucchini, chopped
- 1 tbsp soy sauce, plus salt & pepper to taste
Fried Rice
- 2 cups cooked white rice
- 2 tbsp butter
- 4 cloves garlic, minced
- 3 tbsp soy sauce
- 1 egg
- 4 green onions, sliced
Instructions
- Mix together ingredients for hibachi chicken in a small bowl, then pour over chicken. Cook chicken with sauce in a large skillet over med-high heat for 10 minutes or so, stirring occasionally until fully cooked through. Remove from pan and wipe pan clean.
- Meanwhile, cook rice in a rice cooker or on the stovetop according to package directions. Alternatively, make rice up to 2 days before. Mix ingredients for mustard sauce together at the same time.
- After chicken is finished cooking, add olive oil to the pan, then add vegetables and season with salt & pepper and soy sauce, cooking for 5 minutes or so until veggies are tender-crisp. Remove from heat and set aside.
- Melt butter in the same pan, then saute garlic for 30 seconds until fragrant. Add in rice and soy sauce, cooking for 5 minutes until rice is heated through. Make a hole in the center of rice and crack in egg, scrambling until egg is just set. Toss rice and stir in green onions, then remove from heat and plate rice along with chicken and vegetables.
- Serve chicken, rice and vegetables with mustard sauce on the side, then serve and enjoy!
Notes
How to Tell When Hibachi Chicken Is Done
Cook the diced chicken in a large skillet over medium-high heat, stirring occasionally, for approximately 10 minutes or until cooked through.
Check the largest pieces with an instant-read thermometer. Chicken must reach an internal temperature of 165°F (74°C).
Cooking time may vary depending on the size of the chicken pieces and the heat of your skillet.
Once the chicken is safely cooked, transfer it to a clean plate before preparing the vegetables and fried rice.
Tips for Perfect Hibachi Fried Rice
Use 2 cups of cooked white rice, preferably chilled, for the best fried-rice texture.
If preparing the rice ahead, cool it quickly in a shallow container and refrigerate promptly at 40°F or below. Never leave cooked rice sitting at room temperature for extended periods.
Heat the butter in the skillet and sauté the garlic briefly. Add the chilled rice and soy sauce, stirring until the rice is thoroughly heated.
Make a well in the center, add the egg, and scramble until fully cooked before mixing it into the rice.
Finish with sliced green onions and serve immediately with the hibachi chicken and vegetables.
