If you love the flavors of eggplant Parmesan but want something a little different, this Mushroom Parmesan is a delicious alternative. Meaty portobello mushrooms are grilled until tender, layered with marinara sauce, and baked beneath a golden topping of melted mozzarella and Parmesan cheese. The result is a comforting Italian-inspired dish with savory mushrooms, rich tomato sauce, and plenty of cheesy goodness in every bite.

Inspired by Giada De Laurentiis, this recipe uses just a handful of ingredients: four to six portobello mushrooms, extra-virgin olive oil, salt, black pepper, marinara sauce, mozzarella, Parmesan, and butter. With about 15 minutes of preparation and 25 minutes of cooking, it makes an appealing option for a weeknight meal or a flavorful side dish when you’re serving Italian favorites.

The first step is grilling the mushrooms over medium-high heat for approximately five minutes per side, until they’re tender and heated through. You can use an indoor grill pan or an outdoor gas or charcoal grill. Grilling adds a savory, lightly charred flavor before the mushrooms go into the oven. Next, spread some marinara sauce in a 9-by-13-inch baking dish, arrange the grilled mushrooms on top, and cover them with the remaining sauce. Finish with shredded mozzarella, grated Parmesan, and small pieces of butter.

A 9-by-13-inch oven-safe baking dish is ideal for arranging the mushrooms in a single layer and giving the cheese room to melt and brown evenly. Bake at 400°F for about 15 minutes, until the cheese is melted and the top is golden. Let the dish rest briefly before serving so the hot sauce settles.

Serve Mushroom Parmesan alongside spaghetti, garlic bread, or a crisp green salad for an easy Italian-inspired dinner. It also works as a hearty vegetarian main course when paired with pasta or roasted vegetables. If you’re looking for a simple way to turn portobello mushrooms into something warm, cheesy, and satisfying, this recipe delivers familiar comfort-food flavors without complicated preparation.

Serve this with some broiled Cheesy Garlic Bread, homemade Ciabatta Bread or some crusty French Bread. Add in a garden fresh salad and what a perfect meal.

Mushroom Parmesan

Mushroom Parmesan

  • Total Time: :40
  • Yield: 4 1x

Ingredients

Scale
  • 3 tablespoons extra-virgin olive oil, plus extra for greasing the grill pan
  • 4 to 6 portobello mushrooms
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup marinara sauce (store bought or homemade)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan
  • 2 tablespoons butter, cut into small pieces

Instructions

  1. Place a grill pan over medium-high heat or preheat a gas or charcoal grill.
  2. Drizzle 3 tablespoons of olive oil over both sides of the mushrooms. Sprinkle the mushrooms with salt and pepper. Drizzle olive oil on the grill to prevent the mushrooms from sticking. Grill until the mushrooms are heated through and tender, about 5 minutes per side.
  3. Preheat the oven to 400 degrees F.
  4. Spread 1/2 cup of the marinara sauce on the bottom of a 9 by 13-inch baking dish. Place the grilled mushrooms on top of the marinara sauce and top with the remaining marinara sauce. Sprinkle with the cheeses and top with the butter pieces. Bake until the cheese melts and the top is golden, about 15 minutes. Serve.
