Pea Soup with Dill

This quick and easy Pea Soup with Dill is ready in about 15 minutes.

Ingredients

  • 2 Tbsp oil
  • 1 medium onion, diced
  • 1 lb frozen peas
  • 2 cup chicken broth
  • 1 tsp dried dill
  • Salt and pepper to taste
  • Sour cream

Instructions

  1. In a medium saucepan, heat oil over medium-high. Add onion; cook 3 minutes until tender.
  2. Add frozen peas and chicken broth. Increase heat to high; bring to a boil.
  3. Reduce heat to medium-high; simmer 3 minutes, to slightly reduce.
  4. Pour into blender; purée. Add dried dill, plus salt and pepper to taste.
  5. Pour soup into bowls. Before serving, dab with sour cream; sprinkle with dill.
