- 8 cups cubed watermelon*
- 1/2 cup fresh mint leaves + more for garnish
- 1/2 cup fresh lime juice
- 1 cup white rum
- 1 cup Seltzer water**
- lime wedges for garnish
Prepare the watermelon, by chilling the watermelon cubes for at least an hour. Place inside a blender and blend until smooth and no chunks remain.
In the bottom of a large pitcher, muddle the mint using a wooden spoon (or muddling tool). Fill the pitcher halfway with ice.
Pour in the watermelon juice, lime juice, and rum. Give the mixture a good stir. Top with seltzer water.
Pour into individual glasses and garnish with mint and limes.
*You will need a medium sized watermelon to get 8 cups cubed.
**Use tonic water if looking for a sweeter cocktail.
