This is a simple and delicious side dish. Fresh asparagus is baked until tender, and dressed with a blend of butter, soy sauce, and balsamic vinegar. This baked asparagus side dish is so easy to make, yet it provides a variation to the usual vegetables. When the stalks darken and crisp, they’re not burning, they’re developing more flavor.

- 1 bunch fresh asparagus, trimmed
- cooking spray
- salt and pepper to taste
- 2 tablespoons butter
- 1 tablespoon soy sauce
- 1 teaspoon balsamic vinegar
Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- Arrange the asparagus on a baking sheet. Coat with cooking spray, and season with salt and pepper.
- Bake asparagus 12 minutes in the preheated oven, or until tender.
- Melt the butter in a saucepan over medium heat. Remove from heat, and stir in soy sauce and balsamic vinegar. Pour over the baked asparagus to serve.
Notes
- Trim the woody ends. The bottom of asparagus spears are super tough and nearly impossible to bite through, even when cooked. Cut them off!
- Season generously. Don’t be shy with salt and pepper or else your asparagus can turn out v bland.
- Roast in a single layer. If you overcrowd the pan, you risk steaming the asparagus, which would prohibit char. Char is good!
- Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.
