Ingredients
- 8oz Whole Grain Thin Spaghetti (or pasta of your choice)
- 3oz Prosciutto (cut into thin, bite-sized strips)
- 1 cup Spinach (chiffonade)
- 1 cup Cream
- 1 teaspoon Pesto (optional)
- 1/4 cup Shredded Pecorino Romano Cheese
- 2 cloves Garlic (crushed)
- Olive Oil
- Fresh Pepper
Instructions
- Prepare pasta according to package directions. Drain and set aside.
- In a large sauce pan, add a generous amount of olive oil and heat. Once hot, sauté garlic until lightly browned.
- Add in prosciutto and quickly heat for a minute with garlic.
- Pour in cream, add pesto, cheese, fresh pepper and allow mixture to come to a low boil and thicken.
- Remove from heat and add in 3/4 of the spinach and mix well.
- Top pasta with sauce and garnish with remaining spinach. Enjoy!
