Ingredients
Whole Strawberries
1 Chocolate bar of choice
200g full fat coconut milk
2 cups glutinous rice flour
1 cup cane sugar
7/ 8 strawberries blended for food coloring
Cornstarch for dusting
Sesame seeds for topping
Instructions
Start to trim the strawberries and melt some chocolate. Dip the strawberries into the melted chocolate and place them on a baking sheet, let them set in the fridge overnight.
Mochi dough:
Combine coconut milk, glutinous rice flour and sugar in a saucepan. whisk until smooth. Heat over a medium heat stir the mixture with a spatula. Until the Mochi has thickened and turned into a play dough consistency.
Line a baking tray with a silicone mat and dust of generous amount off cornstarch. Let the dough cool of en roll it into a thin layer. Add more cornstarch, if needed. Cut out the rice size for the strawberries and cover them gently until fully wrapped. Sprinkle some sesame seeds and there you go!
